1. Sarmale is one of the national foods of Moldova, also know as galush.  It is prepared through a rather timely and particular process.  Cabbage leaves or grape leaves are boiled for a bit to soften while a mixture of carrots, onions, and rice is prepared.  Each leaf is then carefully folded over a bit of the mixture.  Then all of the leaves are put into a pot to cook for just a bit longer.

    Easier said than done.  After watching Baba prepare sarmale multiple times, I felt myself up to the task.  But you realllly need nimble fingers for this.  The leaves kept opening and rice kept falling out.  We were pressed for time to get ready for Oxana’s birthday, but Baba said next time we’ll have a serious sarmale-folding lesson.
